Grandma Barton's Banana Walnut Bread
Alice Barton was one of the finest ambassadors for the Barton family business we’ve ever had. During the middle part of the last century, visitors to the Barton Ranch came to see the orchards and processing equipment being built in the shop nearby. Grandma Barton would prepare a meal and invite these visitors to have lunch with she and her husband, Paul, during their visit. The genuine hospitality and kindness shown were often the icing on the cake needed to turn a visitor into a customer, or to strengthen a customer relationship. Dessert always included a dish of ice cream and a slice of Grandma’s Banana Walnut Bread.
1 cup sugar
½ cup vegetable oil
2 eggs
3 bananas mashed (app. 1 1/3 cups)
2 ½ cups flour
½ tsp salt
1 tsp baking soda
1 ½ cups GoldRiver Orchards walnuts
Cream sugar and oil together. Stir in eggs and bananas. Sift together flour, salt, and baking soda. Add dry ingredients to banana mixture. Do not over stir.
Fold in walnuts. For best results, divide batter evenly between two 4 ½ “ x 8 ½ “ foil baking pans. Bake at 375 degrees F for 45 minutes.
