She’s also a wonderful cook, and she shares here one of her favorite summertime recipes for a light, one-dish meal; featuring (of course) GoldRiver Orchards Walnuts.

8 oz. baby peas
3 cups diced cooked chicken
2 large Fuji apples, cored and diced, unpeeled
2 cups seedless red grapes
3 stalks celery, diced
1/2 cup coarsely chopped GoldRiver Orchards Walnuts

1 cup plain low-fat yogurt
2/3 cup buttermilk
2 tablespoons sugar
1 tablespoon lemon juice
1 tablespoon snipped fresh dill (or 1/2 teaspoon dill weed)
1/8 teaspoon salt
1/8 teaspoon pepper

Toast walnuts, set aside until cool. Mix first five ingredients with dressing. Place on bed of field greens. Top with GoldRiver Orchards Walnuts.
For four adults, make 1 1/2 recipes. One recipe of dressing is enough.

This salad makes an excellent summer luncheon one-dish meal.
